To make a smooth batter, put the flour, eggs, sugar and half of the milk in a bowl, and mix with a whisk. You will notice that the batter is still thick and lumpy.
Keep workin the batter without adding more liquid. Because the mixture is thick, the threads of of the whisk will break down any lumps in the flour and make the batter smooth.
When smooth, throughly mix in the remaining milk and water, then add the melted butter and whisk until smooth.
